  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced (optional, for extra flavor)

Instructions

  1. Wash the new potatoes well. If any potatoes are larger than one inch in diameter, cut them in half so they are uniform in size. Do not peel them.
  2. Place the prepared potatoes in a large bowl. Drizzle with olive oil.
  3. Add the dried rosemary, garlic powder, salt, and pepper to the bowl. Toss everything together until the potatoes are evenly coated.
  4. Preheat your air fryer to 380 degrees Fahrenheit for 5 minutes.
  5. Place the seasoned potatoes in the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary to achieve crispiness.
  6. Air fry for 15 minutes.
  7. Open the basket, shake the potatoes well, and check for doneness. If using minced fresh garlic, add it now.
  8. Continue to air fry for another 5 to 8 minutes, or until the potatoes are golden brown and fork-tender.
  9. Remove from the air fryer and serve immediately as a quick potato side dish.

Notes

  • For the crispiest potatoes, avoid overcrowding the basket. Cook in two smaller batches if your air fryer basket is small.
  • If you prefer a smoky flavor, substitute 1/4 teaspoon of the salt with smoked paprika.
  • New potatoes cook faster than larger russet potatoes because of their thin skin and lower starch content. Adjust time based on your air fryer model.
