  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 400 degrees F. Line a 12-cup muffin tin with paper liners or grease the cups well.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. This is your dry mix.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix with a spatula only until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and makes tough muffins.
  5. Gently fold in the blueberries. If using frozen, do not thaw them first.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. For bigger tops, fill them slightly higher.
  7. If using, sprinkle the coarse sugar over the top of each muffin.
  8. Bake for 5 minutes at 400 degrees F. Then, without opening the oven door, reduce the temperature to 375 degrees F and continue baking for another 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
