4 large ripe bananas, sliced
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 1/2 cups cold milk
2 large egg yolks, lightly beaten
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/4 teaspoon vanilla extract (for topping)
Instructions
Prepare the pie crust according to your preferred method; bake if necessary, then let it cool completely.
In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
Gradually whisk in the cold milk until smooth.
Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 8 to 10 minutes. Do not let it boil rapidly.
Remove the saucepan from the heat. In a small bowl, lightly beat the egg yolks. Slowly temper the yolks by whisking in about 1/2 cup of the hot milk mixture into the yolks.
Pour the tempered yolk mixture back into the saucepan with the remaining hot mixture. Return the pan to medium-low heat. Cook, stirring constantly, for 1 minute more. Do not boil.
Remove from heat. Stir in the butter and 1 teaspoon of vanilla extract until the butter melts and the custard is smooth.
Arrange the sliced bananas evenly over the bottom of the cooled pie crust.
Pour the warm custard filling over the bananas. Press plastic wrap directly onto the surface of the custard to prevent a skin from forming. Chill for at least 3 hours, or until completely cold and set.
When ready to serve, beat the heavy whipping cream, powdered sugar, and 1/4 teaspoon vanilla extract until stiff peaks form.
