Make these juicy Bang Bang Chicken Skewers on the grill for a quick weeknight dinner or an easy appetizer. The recipe includes instructions for a bold, creamy, sweet-heat homemade sauce that coats the marinated chicken perfectly.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Wooden or metal skewers (if using wood, soak for 30 minutes)
  • For the Homemade Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons Sriracha (adjust for your heat preference)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • For Garnish (Optional):
  • Chopped green onions
  • Toasted sesame seeds

Instructions

  1. Prepare the Chicken Marinade: In a medium bowl, toss the cubed chicken with olive oil, salt, black pepper, garlic powder, and paprika until the chicken is evenly coated. Let the chicken sit while you prepare the sauce, about 15 minutes.
  2. Make the Creamy Spicy Sauce: In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, sesame oil, fresh ginger, and minced garlic until the sauce is smooth and well combined. This is your homemade bang bang sauce recipe.
  3. Assemble Skewers: Thread the seasoned chicken pieces onto the soaked wooden or metal skewers, leaving a small space between each piece.
  4. Grill the Chicken: Preheat your grill to medium-high heat. Lightly oil the grates. Place the skewers on the hot grill. Cook for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit. You want juicy grilled chicken.
  5. Sauce the Skewers: Once the chicken is cooked, remove the skewers from the grill. Immediately brush the cooked chicken generously on all sides with about half of the prepared Bang Bang sauce.
  6. Serve: Arrange the sauced skewers on a platter. Drizzle with any remaining sauce or serve the extra creamy spicy sauce on the side for dipping. Garnish with chopped green onions and toasted sesame seeds.
  7. Air Fryer Option: If you prefer air fryer chicken skewers, place the assembled skewers in the air fryer basket in a single layer (work in batches). Air fry at 380 degrees Fahrenheit for 10 to 12 minutes, flipping halfway through, until cooked through. Sauce immediately after cooking.

Notes

  • For a bolder flavor, you can marinate the chicken for up to 4 hours before grilling.
  • Serve these Asian chicken skewers over white rice or alongside a fresh salad for a complete weeknight dinner.
  • Adjust the Sriracha amount in the sauce to control the sweet heat level.
