  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 1/2 cups quality marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. Set up your breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine Panko breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper.
  3. Dredge each pounded chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, allowing excess to drip off. Finally, press the cutlet firmly into the Panko mixture to coat both sides completely.
  4. Place the coated chicken cutlets on the prepared baking sheet. Drizzle the tops lightly with olive oil.
  5. Bake for 15 minutes, or until the chicken is nearly cooked through and the crust is golden brown.
  6. Remove the sheet from the oven. Spoon about 2 tablespoons of marinara sauce over each cutlet. Top generously with the sliced mozzarella cheese and a sprinkle of extra Parmesan cheese.
  7. Return the chicken to the oven and bake for another 5 to 7 minutes, or until the cheese is melted, bubbly, and lightly browned.
  8. Remove from the oven and let rest for 2 minutes. Garnish with fresh basil before serving. Serve immediately over your favorite pasta with extra marinara sauce.
