Overnight Blueberry French Toast Casserole

Prepare this easy, make-ahead breakfast bake the night before. You wake up to a delicious, warm casserole ready for the oven, perfect for stress-free weekend brunch or holiday mornings.

  • 1 loaf (about 1 pound) French bread, cut into 1-inch cubes
  • 2 cups fresh or frozen blueberries
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Optional Cream Cheese Layer: 4 ounces cream cheese, softened; 1/4 cup powdered sugar; 1/4 teaspoon vanilla extract
  • Optional Topping: 2 tablespoons melted butter; 2 tablespoons brown sugar

Instructions

  1. Lightly grease a 9×13 inch baking dish. Arrange the cubed French bread evenly in the prepared dish. Sprinkle the blueberries over the bread cubes.
  2. If making the optional cream cheese layer, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Drop small spoonfuls evenly over the bread and blueberries.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Slowly pour the egg mixture evenly over the bread and blueberries in the baking dish, pressing down gently to help the bread absorb the custard.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  7. If using the optional topping, mix the melted butter and brown sugar. Sprinkle this mixture over the top of the casserole.
  8. Bake for 45 to 55 minutes, or until the casserole is puffed, golden brown, and the center is set (no liquid remains when lightly touched).
  9. Let the casserole rest for 10 minutes before cutting and serving. Serve warm with maple syrup.

Notes

  • For the best texture, use slightly stale or day-old French bread. This allows the bread to soak up more custard without becoming mushy.
  • If you use frozen blueberries, do not thaw them before adding them to the casserole.
  • If you need to bake this sooner than overnight, allow the casserole to sit at room temperature for 30 minutes after pouring the custard over the bread before baking. Reduce the bake time slightly if needed.
