4 oz heavy cream
1 cup whole milk
3 oz good quality dark chocolate (60-70% cacao), chopped
1 tablespoon granulated sugar (adjust to taste)
Pinch of salt
1.5 oz bourbon OR 1.5 oz Baileys Irish Cream
Optional toppings: Whipped cream, chocolate shavings, mini marshmallows
Instructions
Combine the heavy cream and whole milk in a small saucepan over medium heat. Warm the mixture until steam appears, but do not let it boil.
Remove the saucepan from the heat. Add the chopped dark chocolate, sugar, and salt to the warm milk mixture.
Let the chocolate sit for one minute to soften, then whisk gently until the chocolate is completely melted and the mixture is smooth and uniform.
Return the saucepan to low heat and warm through for about one minute, stirring constantly. Do not let it simmer.
Remove from heat. Stir in your choice of bourbon or Baileys Irish Cream.
Pour the boozy hot chocolate into mugs. Top with whipped cream and chocolate shavings if desired. Serve immediately.
Notes
For a peppermint twist, substitute 1 oz of the bourbon/Baileys with 1 oz of peppermint schnapps.
If you prefer a less intense chocolate flavor, you can use 2 oz of milk chocolate instead of dark chocolate.
To make this a hot chocolate bar idea, prepare the base chocolate mixture ahead of time and keep it warm. Let guests add their preferred spirit (bourbon, rum, or Irish cream) to their own mug.
