Make this hearty and flavorful Buffalo Chicken Chili in your slow cooker. This easy recipe delivers the bold taste of buffalo wings in a comforting, creamy chili perfect for game day or weeknight dinners.

  • 3 cups cooked, shredded chicken
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 cup chicken broth
  • 1/2 cup buffalo wing sauce (use your favorite brand)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup shredded cheddar cheese (for topping)
  • Optional toppings: Ranch or blue cheese dressing, chopped green onions

Instructions

  1. Place the shredded chicken, black beans, great northern beans, diced tomatoes and green chilies, diced green chilies, chicken broth, buffalo wing sauce, chili powder, cumin, and garlic powder into the basin of your slow cooker.
  2. Stir all ingredients together until they are well combined.
  3. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  4. About 30 minutes before serving, add the cubed cream cheese to the chili. Stir occasionally until the cream cheese has fully melted and the chili is creamy.
  5. Taste the chili and add more buffalo sauce if you prefer more heat or tang.
  6. Serve hot. Top each bowl with shredded cheddar cheese and your choice of dressing or green onions.

Notes

  • For a thicker chili, remove about 1 cup of the chili mixture near the end of cooking, mash the beans slightly, and stir it back into the slow cooker before adding the cream cheese.
  • If you do not have cooked chicken, place 1.5 pounds of raw chicken breasts in the slow cooker with the other ingredients and cook on LOW for 6-8 hours. Shred the chicken directly in the slow cooker before adding the cream cheese.
  • This recipe is excellent for Game Day food gatherings.
