Ingredients
Scale
3 lbs chicken wings (flats and drumettes)
1 tablespoon baking powder (aluminum-free for best results)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup unsalted butter
1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce (or similar hot sauce)
1/4 cup blue cheese dressing (for serving)
1/4 cup crumbled blue cheese (for garnish)
Celery sticks (for serving)
Carrot sticks (for serving)
Instructions
Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with foil and place a wire rack on top of the foil. This setup helps air circulate for crispier wings.
Pat the chicken wings completely dry using paper towels. This step is crucial for achieving crispy wings.
In a large bowl, toss the dry wings with baking powder, salt, and pepper until they are evenly coated. The baking powder helps dry out the skin.
Arrange the wings in a single layer on the wire rack, ensuring they do not touch.
Bake for 20 minutes. Flip the wings over.
Continue baking for another 20 to 25 minutes, or until the wings are golden brown and very crispy.
While the wings bake, prepare the sauce. In a small saucepan over low heat, melt the butter. Remove from heat and whisk in the hot sauce until fully combined. This creates your homemade buffalo sauce.
Transfer the hot, crispy wings to a large, clean bowl. Pour the buffalo sauce mixture over the wings and toss gently until every wing is fully coated.
Serve the tangy hot wings immediately with the blue cheese dip and fresh vegetable sticks.
Notes
For extra crispy wings, you can bake them for an additional 5 minutes after saucing them, placed back on the rack.
If you prefer a thicker sauce, reduce the sauce mixture slightly on the stovetop before tossing.
This recipe works well for Super Bowl snacks or any easy chicken wing dinner.
