This recipe transforms cabbage into tender, savory wedges with crispy edges using garlic and Parmesan cheese. It is an easy vegetable side dish perfect for weeknights.

  • 1 medium head green cabbage
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Remove any loose outer leaves from the cabbage. Cut the cabbage head into 4 equal wedges, keeping the core intact to hold the leaves together.
  3. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  4. Brush the oil mixture evenly over all sides of each cabbage wedge.
  5. Place the wedges cut-side up on the prepared baking sheet.
  6. Roast for 20 minutes.
  7. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
  8. Return to the oven and roast for another 5 to 10 minutes, or until the cabbage is tender and the cheese is melted and lightly golden brown.
  9. Serve immediately as a delicious side dish.

  • You can use this recipe for low carb cabbage meals.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • If you prefer softer edges, roast for a few extra minutes until the edges caramelize slightly.
