Create this satisfying Chicken Caesar Pasta Salad quickly. It combines tender chicken, pasta, crisp romaine, and a creamy homemade Caesar dressing for a hearty meal perfect for lunch, dinner, or potlucks.

  • 1 pound rotini or penne pasta
  • 2 large boneless, skinless chicken breasts, cooked and shredded or cubed
  • 4 cups chopped romaine lettuce
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup croutons
  • For the Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse with cold water to cool it down quickly. Set aside.
  2. While the pasta cooks, prepare the homemade Caesar dressing. In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, and minced garlic until smooth.
  3. Stir in the 1/4 cup of grated Parmesan cheese into the dressing. Season with salt and pepper to your preference.
  4. In a large bowl, combine the cooled pasta, cooked chicken, and chopped romaine lettuce.
  5. Pour the Caesar dressing over the pasta mixture. Toss everything gently until the pasta, chicken, and lettuce are evenly coated.
  6. Fold in the 1/2 cup of grated Parmesan cheese.
  7. Just before serving, add the croutons and toss once more. If you are meal prepping, keep the croutons separate and add them right before eating to maintain crunch.
  8. Serve the chicken caesar pasta salad chilled.

  • For quick chicken, use pre-cooked rotisserie chicken breast.
