Ingredients
Scale
2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1/4 cup fresh lemon juice
1/4 cup olive oil
2 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 large red onion, cut into 1-inch pieces
1 large bell pepper (any color), cut into 1-inch pieces
Wooden or metal skewers (if using wooden, soak them for 30 minutes)
Instructions
Combine the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper in a large bowl. This is your quick chicken kebab marinade.
Add the cubed chicken to the marinade. Toss to coat completely. Cover the bowl and refrigerate for at least 2 hours, or up to 8 hours, for tender chicken kebab secrets.
Preheat your grill to medium-high heat (about 400°F). If using wooden skewers, drain them now.
Thread the marinated chicken pieces onto the skewers, alternating with pieces of red onion and bell pepper to make chicken and vegetable skewers.
Lightly oil the grill grates. Place the chicken kebabs on the hot grill.
Grill for 10 to 15 minutes, turning every 3 to 4 minutes, until the chicken is cooked through and has nice char marks. The internal temperature should reach 165°F for perfectly cooked chicken skewers.
Remove the grilled chicken kebabs from the heat and let them rest for 5 minutes before serving.
Notes
For the best results when making marinated chicken kebabs, use chicken thighs; they retain moisture better than breasts.
If you prefer oven baked chicken kebabs, arrange them on a foil-lined baking sheet and bake at 400°F for 20 minutes, turning halfway.
If you want an air fryer chicken kebab recipe, cook at 380°F for 12 to 15 minutes, flipping halfway through.
Serve these mediterranean chicken skewers with tzatziki or a simple yogurt sauce for great chicken kebab sauce pairings.
