1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
8 oz fresh mushrooms, sliced
5 oz fresh spinach
4 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
Add the sliced mushrooms to the same skillet and cook until they release their moisture and start to brown, about 5 minutes.
Add the fresh spinach to the skillet. Cook until the spinach wilts down completely.
Reduce the heat to low. Stir in the softened cream cheese, heavy cream, and chicken broth until the sauce is smooth.
Stir in the garlic powder, onion powder, salt, and pepper. Mix well.
Return the cooked chicken to the skillet. Stir to coat everything in the sauce.
Pour the mixture into the prepared baking dish.
Sprinkle 3/4 cup of the mozzarella cheese and all of the Parmesan cheese over the top.
Bake for 15 to 20 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
Remove from the oven and let it rest for 5 minutes before serving. Sprinkle the remaining 1/4 cup mozzarella cheese on top just before serving if desired.
Notes
For a richer flavor, substitute half of the heavy cream with sour cream.
If you prefer a thicker sauce, reduce the chicken broth by 2 tablespoons before adding the cream cheese.
You can use pre-cooked rotisserie chicken to save time; skip step 2 and add the shredded chicken when combining the sauce ingredients.
