Classic Hearty Slow Cooker Pork Stew with Root Vegetables

Make this classic, hearty pork stew in your slow cooker for fall-apart tender pork and rich, comforting flavor. This easy pork dinner uses simple root vegetables and creates a satisfying, homestyle meal perfect for family dinners.

  • 3 lbs pork shoulder, cut into 1.5-inch cubes
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and thickly sliced
  • 3 large russet potatoes, peeled and cubed
  • 1 cup beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for thickening)

Instructions

  1. Pat the pork cubes dry and season them with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the pork cubes in batches until they have color on all sides. Do not crowd the pan. Remove the browned pork and set it aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Transfer the browned pork, onions, and garlic to your slow cooker.
  5. Add the carrots, potatoes, beef broth, diced tomatoes (with juice), thyme, rosemary, bay leaf, and Worcestershire sauce to the slow cooker. Stir gently to combine.
  6. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3.5 to 4 hours, until the pork is very tender.
  7. Remove and discard the bay leaf.
  8. Stir the cornstarch slurry into the stew. Cover and cook on HIGH for 15 to 20 minutes, or until the stew has thickened to your liking.
  9. Taste the stew and adjust salt and pepper if needed before serving.

Notes

  • For the best texture, sear the pork before adding it to the slow cooker; this builds deep flavor in the savory pork broth.
  • If you prefer a less thick stew, omit the cornstarch slurry step.
  • This recipe works well for make ahead meals; refrigerate leftovers for up to 3 days.
