You make this sweet and tangy Cranberry Orange Chicken by baking it. This recipe uses simple ingredients for a flavorful weeknight dinner or festive holiday meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 (14 ounce) can whole berry cranberry sauce
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together the cranberry sauce, orange juice, orange zest, rosemary, salt, and pepper until combined. This creates your glaze.
  3. Place the chicken breasts in the prepared baking dish in a single layer.
  4. Pour the cranberry orange glaze evenly over the chicken breasts.
  5. Bake for 30 to 35 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Spoon extra sauce from the pan over the chicken.

Notes

  • For a richer flavor, use fresh cranberries if they are in season.
  • You can substitute chicken thighs for breasts; adjust the cooking time as needed.
  • Serve this glazed chicken over rice or with mashed potatoes to soak up the extra sauce.
