1 pound lean ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 medium onion, chopped
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
1 teaspoon dried Italian seasoning
1/4 teaspoon red pepper flakes (optional)
12 ounces penne or rotini pasta
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach (optional)
Instructions
Brown the ground beef in a large skillet over medium-high heat. Drain off any excess fat. Season the beef with salt and pepper.
Add the chopped onion to the skillet and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the diced tomatoes (with their juice), beef broth, Italian seasoning, and red pepper flakes, if using. Bring the mixture to a boil.
Add the dry pasta to the skillet. Stir well to submerge the pasta in the liquid.
Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy. Cook for 2 minutes until heated through.
If using spinach, stir it in during the last minute until it wilts.
Serve immediately for a hearty beef pasta dinner.
Notes
For a high protein beef pasta, substitute half the heavy cream with Greek yogurt, stirring it in off the heat at the end.
You can use 1 pound of ground turkey or ground Italian sausage instead of ground beef.
This recipe works well as a one pot beef pasta meal, minimizing cleanup.
