  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup stone-ground grits (not instant)
  • 4 tablespoons unsalted butter
  • 2 cups sharp cheddar cheese, freshly grated

Instructions

  1. Combine water, milk, heavy cream, salt, and pepper in a medium saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally.
  2. Slowly whisk in the grits to prevent lumps. Reduce the heat to low.
  3. Cook the grits uncovered, stirring frequently to keep them smooth, for 20 to 25 minutes, or until the grits are thick and tender.
  4. Remove the saucepan from the heat. Stir in the butter until it melts completely.
  5. Add the grated sharp cheddar cheese one handful at a time, stirring well after each addition until the cheese is fully incorporated and the grits are smooth and creamy.
