Create a hearty, homestyle meal with this easy Crock Pot Chicken and Stuffing recipe. Tender chicken and savory stuffing cook together in the slow cooker, making it the perfect dump-and-go dinner for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (18 ounce) box dry stuffing mix (any flavor)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon dried poultry seasoning
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chicken pieces in a single layer on the bottom of a 6-quart slow cooker.
  2. In a medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, and chicken broth until smooth. Stir in the poultry seasoning and black pepper.
  3. Pour the soup mixture evenly over the chicken in the slow cooker.
  4. Sprinkle the dry stuffing mix evenly over the top of the liquid mixture. Do not stir the stuffing into the liquid.
  5. Cover the slow cooker and cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours, until the chicken is cooked through and the stuffing is tender.
  6. Remove the chicken and shred it using two forks. Stir the shredded chicken back into the stuffing mixture to combine and create a creamy casserole consistency.
  7. Serve immediately for a family favorite slow cooker meal.

Notes

  • For a complete meal, you can layer 1 cup of frozen green beans over the chicken before adding the soup mixture.
  • If you prefer a crispier top layer for your stuffing, you can carefully remove the lid for the last 30 minutes of cooking on HIGH, if your slow cooker allows.
  • This recipe works well with chicken thighs for extra juicy results.
