  • 2 lbs boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Season the chicken evenly with salt, pepper, garlic powder, and Italian seasoning.
  2. Pour the chicken broth over the chicken. Scatter the chopped sun-dried tomatoes around the chicken.
  3. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  4. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  5. In a small bowl, whisk together the heavy cream, grated Parmesan cheese, cornstarch, and cold water until smooth.
  6. Pour the cream mixture into the slow cooker with the chicken and sauce. Stir gently to combine.
  7. Cook on LOW for an additional 15 to 20 minutes, or until the sauce has thickened to your liking.
  8. Taste the sauce and adjust salt and pepper if needed. Garnish with fresh parsley before serving.
  9. Serve this easy crockpot chicken dinner over pasta, rice, or mashed potatoes to soak up the sauce.

Notes

  • For an extra rich flavor, use chicken thighs instead of breasts.
