1 pound ground beef or 2 cups cooked shredded chicken
1 medium onion, chopped
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of mushroom soup
1 cup sour cream
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 packet (1 ounce) taco seasoning mix
2 cups shredded cheddar cheese, divided
1 bag (9.25 ounces) Nacho Cheese flavored Doritos, lightly crushed
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
If using ground beef, cook the beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess fat. If using shredded chicken, skip this step.
In a large bowl, combine the cooked meat (or chicken), cream of chicken soup, cream of mushroom soup, sour cream, Rotel tomatoes, taco seasoning, and 1 cup of the shredded cheddar cheese. Mix until everything is well combined.
Spread half of the meat mixture evenly into the prepared baking dish.
Layer half of the crushed Doritos over the meat mixture.
Spread the remaining meat mixture over the Doritos layer.
Top with the remaining crushed Doritos.
Sprinkle the remaining 1 cup of shredded cheddar cheese over the top layer of Doritos.
Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.
Let the casserole rest for 5 minutes before serving.
Notes
For a freezer meal, assemble the casserole completely, cover tightly with foil, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking, or add 15-20 minutes to the covered baking time if baking from frozen.
You can substitute cream of chicken soup with cream of celery soup for a slight flavor variation.
Use your favorite flavor of Doritos, such as Cool Ranch, for a different taste profile.
