Make this hearty, cheesy breakfast casserole featuring sausage, eggs, and hash browns. It is simple to assemble and perfect for feeding a crowd at brunch or for easy meal prep.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (30 ounce) bag frozen shredded hash browns, thawed
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Spread the cooked and drained sausage evenly over the bottom of the prepared baking dish.
  3. Layer the thawed hash browns over the sausage. Sprinkle the chopped onion over the hash browns.
  4. Distribute the shredded cheddar cheese evenly over the hash brown and onion layer.
  5. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until fully combined.
  6. Pour the egg mixture slowly and evenly over the cheese layer in the baking dish.
  7. Bake for 40 to 45 minutes, or until the eggs are set and the top is lightly golden brown. You can insert a knife near the center; it should come out clean when done.
  8. Let the casserole rest for 5 to 10 minutes before slicing and serving.

Notes

  • For a make-ahead option, assemble the entire casserole, cover it tightly, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • You can substitute turkey sausage for a leaner option, or use bacon bits if you prefer.
  • This recipe is excellent for meal prep; slice cooled leftovers and reheat individual portions in the microwave throughout the week.
