Make restaurant-quality chicken parmesan at home with this simple baked recipe. You get crispy, cheesy cutlets without the mess of frying.

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
  2. Set up a standard breading station with three shallow dishes. In the first dish, place the flour seasoned with salt and pepper. In the second dish, place the beaten eggs. In the third dish, mix the panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, and garlic powder.
  3. Take one chicken cutlet and dredge it thoroughly in the flour, shaking off any excess. Dip it into the egg mixture, letting the extra drip off. Finally, press the cutlet firmly into the breadcrumb mixture until fully coated. Repeat for all cutlets.
  4. Place the breaded cutlets on the prepared baking sheet. Drizzle the tops lightly with olive oil.
  5. Bake for 15 minutes.
  6. Remove the pan from the oven. Spoon about 1/4 cup of marinara sauce over the top of each cutlet. Top each with slices of fresh mozzarella cheese. Sprinkle with extra Parmesan cheese.
  7. Return the pan to the oven and bake for another 5 to 10 minutes, or until the cheese is melted, bubbly, and lightly golden, and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  8. Let the chicken rest for a few minutes before serving over your favorite pasta.

Notes

  • For extra flavor, use a high-quality store-bought marinara sauce.
  • If you prefer a crispier crust, you can briefly pan-fry the breaded cutlets in a little oil for 1 minute per side before adding the sauce and cheese and baking.
