Easy Cranberry Brie Bites with Puff Pastry

Make these simple, elegant Brie Bites using flaky puff pastry, creamy Brie cheese, and sweet-tart cranberry sauce. They are a perfect, quick appetizer for holiday parties or entertaining guests.

  • 1 sheet frozen puff pastry, thawed
  • 8 ounces Brie cheese, rind removed and cut into small cubes
  • 1/2 cup cranberry sauce (canned or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet.
  3. Use a round cookie cutter (about 2 inches in diameter) to cut circles from the puff pastry. You should get about 12 to 16 circles.
  4. Gently press each pastry circle into the wells of a mini muffin tin, forming a cup shape.
  5. Place a small cube of Brie cheese into the bottom of each pastry cup.
  6. Top the Brie with about 1/2 teaspoon of cranberry sauce.
  7. Brush the edges of the puff pastry lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown and the cheese is melted.
  9. Remove from the oven and let the Brie Bites cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool slightly before serving warm.

Notes

  • For a richer flavor, you can sprinkle a few chopped pecans over the cranberry sauce before baking.
  • If you do not have a mini muffin tin, you can bake these on a flat, parchment-lined baking sheet, though they will spread more.
  • You can assemble these bites up to 4 hours ahead of time. Keep them covered in the refrigerator and bake just before your guests arrive.
