Bake these simple pizza muffins for a kid-friendly snack, party food, or easy freezer lunch component.

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate bowl, mix the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the mozzarella cheese and chopped pepperoni.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with about 1 teaspoon of pizza sauce.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For freezer meals, cool the muffins completely, then place them in a freezer-safe bag. Thaw overnight or reheat from frozen at 350 degrees Fahrenheit for about 15 minutes.
  • You can substitute the pepperoni with cooked sausage or diced ham for variety.
  • Use your favorite shredded cheese blend if you do not have mozzarella.
