  • 15 ounces whole milk ricotta cheese, drained if watery
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hot honey (or regular honey mixed with a pinch of cayenne pepper)
  • 1 teaspoon fresh thyme leaves, for garnish (optional)

Instructions

  1. Place the drained ricotta cheese, 2 tablespoons of olive oil, salt, and pepper into the bowl of a food processor.
  2. Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and airy. You want a light, whipped texture.
  3. Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create a slight well in the center.
  4. Drizzle the hot honey evenly over the top of the dip.
  5. Finish with an extra light drizzle of olive oil and a sprinkle of fresh thyme leaves, if using.
  6. Serve immediately with crostini, crackers, or fresh vegetables for dipping.
