Ingredients
Scale
15 ounces whole milk ricotta cheese, drained if watery
2 tablespoons extra virgin olive oil, plus more for drizzling
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup hot honey (or regular honey mixed with a pinch of cayenne pepper)
1 teaspoon fresh thyme leaves, for garnish (optional)
Instructions
Place the drained ricotta cheese, 2 tablespoons of olive oil, salt, and pepper into the bowl of a food processor.
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and airy. You want a light, whipped texture.
Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create a slight well in the center.
Drizzle the hot honey evenly over the top of the dip.
Finish with an extra light drizzle of olive oil and a sprinkle of fresh thyme leaves, if using.
Serve immediately with crostini, crackers, or fresh vegetables for dipping.
Notes
If you do not have a food processor, you can use a hand mixer or stand mixer. Beat the ricotta on medium-high speed until lightened, about 3 minutes, before adding the oil and seasonings.
For a savory variation, skip the hot honey and instead top the dip with roasted garlic, lemon zest, and chopped fresh basil.
This dip is best served the day it is made for the freshest texture.
