Ingredients
Scale
1 bag (12 ounces) small pretzel twists or loops
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Instructions
Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
Spread the pretzels in a single layer on the prepared baking sheets. Do not overlap them.
In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir constantly until the mixture comes to a full boil. Let it boil for exactly one minute, stirring gently.
Remove the saucepan from the heat immediately. Stir in the vanilla extract.
Quickly sprinkle the baking soda over the mixture and stir until it is fully combined and foamy. This activates the toffee coating.
Pour the hot toffee mixture evenly over the pretzels on the baking sheets. Use a spatula to gently fold and toss the pretzels until they are fully coated. Work quickly before the toffee sets.
Bake for 20 minutes. After 20 minutes, carefully remove the sheets from the oven. Gently stir the pretzels to ensure even baking and crispness.
Return the sheets to the oven and bake for another 5 to 10 minutes, watching closely to prevent burning. The toffee should look deep golden brown and feel hard to the touch.
Remove from the oven and immediately transfer the coated pretzels to a large piece of wax paper or parchment paper to cool completely. Do not let them sit on the hot baking sheet, or they will stick and become too soft.
Once completely cool and hard, break apart any large clumps. Store in an airtight container.
Notes
For extra flavor, sprinkle a pinch of coarse sea salt over the pretzels right after you remove them from the oven.
If you want a chocolate drizzle, wait until the toffee coating is completely cool and hard before drizzling melted chocolate over the top.
This recipe is excellent for edible holiday gifts; package them in clear cellophane bags tied with a ribbon.
