Make a quick fruit pizza using refrigerated sugar cookie dough as the base and top it with simple cream cheese frosting and fresh fruit.

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit (strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Press the refrigerated sugar cookie dough evenly onto a 12-inch pizza pan or a large baking sheet lined with parchment paper.
  3. Bake for 12 to 15 minutes, or until the edges are lightly golden brown. Do not overbake; the center should look set but still soft.
  4. Let the cookie crust cool completely on the pan.
  5. While the crust cools, prepare the frosting: Beat the softened cream cheese, powdered sugar, and vanilla extract together in a medium bowl until smooth and creamy.
  6. Once the crust is cool, spread the cream cheese frosting evenly over the entire cookie surface.
  7. Arrange your mixed fresh fruit decoratively over the frosting layer. Slice and serve immediately, or chill for up to 2 hours before serving.

Notes

  • For a mini fruit pizza option, press the dough into smaller circles or use a muffin tin for individual servings.
  • If you want a slightly firmer crust, bake for an extra 2 minutes, but watch carefully to prevent dryness.
