This easy hashbrown casserole delivers creamy texture, sharp cheese flavor, and a satisfying crunchy topping. It is a classic comfort food side dish perfect for feeding a crowd at holidays or potlucks.

  • 32 ounces frozen shredded hash brown potatoes, thawed
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 cups crushed cornflakes

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, cream of chicken soup, sour cream, Cheddar cheese, and Monterey Jack cheese. Mix until all ingredients are evenly incorporated.
  3. Spread the potato mixture evenly into the prepared baking dish.
  4. In a separate small bowl, mix the melted butter with the crushed cornflakes until the flakes are fully coated.
  5. Sprinkle the buttered cornflake mixture evenly over the top of the potato casserole.
  6. Bake for 40 to 45 minutes, or until the casserole is bubbly throughout and the topping is golden brown and crisp.
  7. Let the casserole rest for 5 to 10 minutes before you serve it.

Notes

  • You can prepare this entire casserole, cover it, and refrigerate it up to 24 hours before baking. Add about 10 to 15 minutes to the baking time if cooking directly from the refrigerator.
  • For a different topping flavor, substitute the cornflakes with crushed butter crackers or potato chips.
  • If you do not have cream of chicken soup, you can substitute it with cream of mushroom soup or a mixture of milk and flour for a homemade sauce base.
