Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
If using, add the chopped onion and cook until soft, about 3 minutes.
Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
Add the uncooked rice to the saucepan and stir constantly for 1 to 2 minutes to lightly toast the grains.
Pour in the chicken broth and add the salt and pepper. Bring the mixture to a boil.
