Make this easy Garlic Butter Rice side dish using simple ingredients like long grain white rice, fresh garlic, and rich butter. It cooks quickly and pairs well with chicken or seafood.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped (optional)
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups chicken broth (or water)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. If using, add the chopped onion and cook until soft, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Add the uncooked rice to the saucepan and stir constantly for 1 to 2 minutes to lightly toast the grains.
  5. Pour in the chicken broth and add the salt and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 to 18 minutes, or until all the liquid is absorbed. Do not lift the lid while simmering.
  7. Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
  8. Remove the lid. Add the remaining 2 tablespoons of butter and fluff the rice gently with a fork.
  9. Stir in the fresh parsley before serving.

Notes

  • For extra flavor, use all chicken broth instead of water.
  • Rinsing the rice before cooking helps achieve a fluffier texture.
