1 pound ground beef
1 medium onion, chopped
2 carrots, peeled and sliced
2 celery stalks, sliced
4 cups beef broth
1 (14.5 ounce) can diced tomatoes, undrained
2 medium potatoes, peeled and cubed
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen peas
1 cup egg noodles (optional)
Instructions
Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables begin to soften, about 5 to 7 minutes.
Pour in the beef broth and add the diced tomatoes (with their juice). Stir in the cubed potatoes, Italian seasoning, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the potatoes are tender.
If you are using noodles, add them now and cook according to package directions, usually about 5 to 8 minutes, until they are tender.
Stir in the frozen peas during the last 3 minutes of cooking.

For a creamy potato hamburger soup variation, stir in 1/2 cup of heavy cream or 4 ounces of cream cheese during the last 5 minutes of cooking until melted and smooth.
