This hearty, layered John Wayne Casserole features seasoned ground beef, a creamy vegetable and cheese mixture, and a simple biscuit topping. It is a classic comfort food perfect for family dinners.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup sour cream
  • 1 (10 ounce) package frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 package refrigerated biscuit dough (8 biscuits)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef and onion mixture with the cream of mushroom soup, cream of chicken soup, sour cream, frozen mixed vegetables, 1/2 cup of the cheddar cheese, chili powder, garlic powder, salt, and pepper. Mix well.
  4. Spread the beef and vegetable mixture evenly into the prepared baking dish.
  5. Arrange the refrigerated biscuit dough pieces over the top of the beef mixture, spacing them slightly apart.
  6. Bake for 25 minutes, or until the biscuits are golden brown and cooked through.
  7. Remove the casserole from the oven and immediately sprinkle the remaining 1/2 cup of cheddar cheese over the hot biscuits.
  8. Return the dish to the oven for 5 more minutes, or until the cheese is melted and bubbly.
  9. Let the casserole rest for 5 minutes before you slice and serve it.

Notes

  • For a Tex-Mex flavor profile, add one small can of drained diced green chiles to the meat mixture.
  • You can substitute the biscuit dough with your favorite cornbread mix prepared according to package directions for a different topping texture.
  • Prepare the meat and vegetable base ahead of time and store it covered in the refrigerator for up to one day before baking.
