A simple, high-protein lasagna recipe using cottage cheese instead of ricotta cheese for a budget-friendly and satisfying family dinner.

  • 1 pound ground beef or turkey
  • 1 (15 ounce) container cottage cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 large egg
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24 ounce) jar marinara sauce
  • 9 lasagna noodles, cooked according to package directions
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground meat in a skillet over medium heat. Drain off any fat.
  3. In a medium bowl, combine the cottage cheese, squeezed spinach, egg, basil, garlic powder, salt, and pepper. Mix well. This is your cheese mixture.
  4. Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
  5. Arrange three cooked lasagna noodles over the sauce.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon half of the remaining marinara sauce over the mozzarella.
  9. Repeat the layers: three noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and the rest of the marinara sauce.
  10. Top with the last three noodles. Sprinkle the remaining mozzarella and all of the Parmesan cheese on top.
  11. Bake for 30 minutes, or until the cheese is melted and bubbly and the sauce is hot. Let the lasagna rest for 10 minutes before cutting and serving.
