1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
Place the cut chicken pieces in a medium bowl. Season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the seasoned chicken to the hot skillet in a single layer, avoiding overcrowding. Cook for 3 to 4 minutes per side until golden brown and cooked through.
Reduce the heat to medium-low. Add the minced garlic and dried oregano to the skillet. Cook for 1 minute, stirring constantly until the garlic is fragrant. Do not let the garlic burn.
Pour in the fresh lemon juice. Stir well, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute until slightly reduced.
Remove the skillet from the heat. Toss the chicken bites to coat them evenly in the lemon garlic sauce.
Transfer the lemon garlic chicken bites to a serving dish and garnish with fresh chopped parsley before serving.
Notes
For extra brightness, add the zest of half a lemon along with the lemon juice in step 5.
If you prefer an air fryer lemon garlic chicken, toss the seasoned chicken with 1 tablespoon of oil and cook at 380°F (195°C) for 12-15 minutes, shaking halfway through, then toss with the garlic, oregano, and lemon juice mixture after cooking.
