This casserole combines creamy mashed potatoes with cheddar cheese, bacon, and green onions, baked until golden. It is a comforting side dish perfect for holidays or family dinners.

  • 5 lbs Russet potatoes, peeled and quartered
  • 1 cup whole milk, warmed
  • 8 tablespoons unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup chopped green onions, divided
  • 1/2 cup shredded Monterey Jack cheese (optional topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Place the peeled and quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes.
  3. Drain the potatoes well and return them to the hot pot. Mash the potatoes thoroughly until smooth.
  4. Add the warm milk, butter, cream cheese, and sour cream to the mashed potatoes. Mix until fully combined and creamy.
  5. Stir in the salt, pepper, 1 1/2 cups of the cheddar cheese, crumbled bacon, and half of the green onions. Mix gently until just combined. Do not overmix.
  6. Spread the potato mixture evenly into the prepared baking dish.
  7. In a small bowl, mix the remaining 1/2 cup cheddar cheese with the Monterey Jack cheese, if using. Sprinkle this cheese mixture evenly over the top of the casserole.
  8. Bake for 20 to 25 minutes, or until the casserole is heated through and the cheese topping is melted and bubbly.
  9. Remove from the oven and let it rest for 5 minutes. Sprinkle the remaining green onions over the top before serving.
