Make these copycat McGriddle Bites at home. This easy recipe combines fluffy pancakes, savory sausage, and cheese into convenient, bite-sized muffins perfect for a quick breakfast or meal prep.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup (plus extra for serving)
  • 1 cup cooked, crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, melted butter, and 1 tablespoon of maple syrup until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  5. Gently fold in the crumbled sausage and shredded cheddar cheese.
  6. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the McGriddle Bites cool in the pan for a few minutes before transferring them to a wire rack.
  9. Serve warm with extra maple syrup for dipping.

Notes

  • For freezer breakfast meals, cool the bites completely, then place them in a freezer-safe bag or container. Reheat from frozen in the microwave or oven.
  • To make these high protein breakfast bites, substitute regular pancake mix with a protein pancake mix.
  • You can use pre-cooked, crumbled sausage or cook and crumble your own breakfast sausage patties.
