2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup milk
2 tablespoons melted butter
1 tablespoon maple syrup (plus extra for serving)
1 cup cooked, crumbled breakfast sausage
1/2 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the egg, milk, melted butter, and 1 tablespoon of maple syrup until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
Gently fold in the crumbled sausage and shredded cheddar cheese.
Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Let the McGriddle Bites cool in the pan for a few minutes before transferring them to a wire rack.

Notes
For freezer breakfast meals, cool the bites completely, then place them in a freezer-safe bag or container. Reheat from frozen in the microwave or oven.
