Make this copycat Mexican Pizza at home. You get crispy tortillas layered with seasoned ground beef, refried beans, and melted cheese, topped with sauce and fresh ingredients for a satisfying Tex-Mex dinner.

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 12 small corn tortillas
  • 1 cup refried beans, warmed
  • 1 cup enchilada sauce
  • 3 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives
  • 1 large tomato, diced
  • 1/4 cup chopped green onion
  • Vegetable oil, for frying

Instructions

  1. Prepare the meat: Brown the ground beef in a skillet over medium heat. Drain any excess fat. Stir in the taco seasoning and water. Simmer for 5 to 7 minutes until the liquid reduces. Set aside.
  2. Crisp the tortillas: Heat about 1/2 inch of vegetable oil in a separate skillet over medium-high heat. Fry the corn tortillas one at a time for about 30 to 60 seconds per side until they are golden brown and crisp. Remove and place on a paper towel-lined plate to drain excess oil.
  3. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet.
  4. Assemble the first layer: Place six crispy tortillas on the prepared baking sheet. Spread an even layer of warm refried beans over each tortilla.
  5. Add the meat: Spoon the seasoned ground beef evenly over the beans on all six tortillas.
  6. Add the sauce and cheese: Drizzle enchilada sauce over the meat layer on each pizza. Top generously with the shredded cheese blend.
  7. Assemble the second layer: Place the remaining six crispy tortillas on top of the cheese layer. Spread a thin layer of enchilada sauce over the top tortilla of each stack, followed by a final layer of cheese.
  8. Bake: Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  9. Top and serve: Remove from the oven. Top each Mexican pizza with diced tomatoes, sliced black olives, and chopped green onions. Slice into wedges and serve immediately.

Notes

  • For a non-fried, healthier option, bake the tortillas directly on the oven rack at 400°F for 5-7 minutes, flipping halfway, until crisp.
  • You can substitute ground turkey or chicken for the ground beef.
  • If you prefer the classic Taco Bell flavor, use a mild red enchilada sauce.
