Ingredients

Scale
  • 6 cups cubed watermelon
  • 3 ripe peaches, pitted and sliced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • Pinch of salt

Instructions

  1. Place the cubed watermelon and sliced peaches into a large bowl.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, and salt to make the simple vinaigrette for fruit.
  3. Pour the dressing over the watermelon and peaches. Gently toss the fruit to coat.
  4. Sprinkle the crumbled feta cheese and chopped mint leaves over the salad.
  5. Toss lightly one more time just before serving.

Notes

  • For best flavor, chill the salad for 15 minutes before serving, but do not let it sit for too long or the watermelon will release too much liquid.
