Make these easy, no-bake peanut butter oatmeal balls for quick, healthy snacks perfect for meal prep or busy weekends.

  • 1 cup rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the rolled oats, peanut butter, honey or maple syrup, ground flaxseed, vanilla extract, and chocolate chips (if using) in a medium bowl.
  2. Mix all ingredients thoroughly with a sturdy spoon or your hands until a uniform dough forms.
  3. Place the bowl in the refrigerator for 15 minutes to firm up the mixture slightly.
  4. Roll the mixture into small balls, about 1 inch in diameter. You should get about 12 to 15 energy bites.
  5. Store the peanut butter oatmeal balls in an airtight container in the refrigerator.

Notes

  • If the mixture seems too dry, add one teaspoon of water or milk at a time until it holds together when squeezed.
  • For a different flavor, substitute sunflower seed butter for peanut butter.
  • These are great for easy kids food when you need a fast, healthy snack.
