Make this classic comfort food dinner easily in your slow cooker. This recipe combines tender pork shoulder, tangy sauerkraut, and sweet apples for a hearty, flavorful meal with minimal effort.

Ingredients

Scale
  • 3 lb pork shoulder roast
  • 1 (32 ounce) bag sauerkraut, drained
  • 2 large apples, cored and sliced
  • 1 large yellow onion, sliced
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the sliced onions in the bottom of your slow cooker.
  2. Place the pork shoulder on top of the onions.
  3. In a bowl, mix the drained sauerkraut, sliced apples, chicken broth, brown sugar, caraway seeds, salt, and pepper.
  4. Spoon the sauerkraut mixture evenly over the pork roast.
  5. Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 3 to 4 hours, until the pork is very tender.
  6. Remove the pork and shred it using two forks. Return the shredded pork to the slow cooker and stir to combine with the juices and sauerkraut.
  7. Serve this hearty sauerkraut dish hot, perhaps with mashed potatoes or rye bread.

Notes

  • For a richer flavor, sear the pork roast on all sides in a hot skillet before placing it in the slow cooker.
  • If you prefer less tang, rinse the sauerkraut lightly before draining it, though this reduces some traditional flavor.
  • This recipe is excellent for New Year’s Day food tradition to bring good luck.
