Make a tender and juicy pork loin roast using simple ingredients and clear oven instructions for a perfect weeknight or Sunday dinner.

Ingredients

Scale
  • 3 lb pork loin roast, trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the pork loin roast dry with paper towels. This helps create a better crust.
  3. In a small bowl, mix together the salt, pepper, garlic powder, and thyme.
  4. Rub the olive oil all over the pork loin roast.
  5. Sprinkle the spice mixture evenly over the entire surface of the roast.
  6. Place the roast in a roasting pan or on a rimmed baking sheet.
  7. Roast for 15 minutes at 400 degrees Fahrenheit.
  8. Reduce the oven temperature to 350 degrees Fahrenheit. Continue roasting until the internal temperature reaches 145 degrees Fahrenheit on a meat thermometer, about 45 to 60 minutes more, depending on the roast size.
  9. Remove the pork loin roast from the oven when it reaches 145 degrees Fahrenheit internal temperature.
  10. Tent the roast loosely with foil and let it rest for 10 to 15 minutes before slicing. This resting period keeps the meat juicy.
  11. Slice the roast against the grain into serving portions.
  12. If desired, make a simple pan sauce using the drippings in the pan.

Notes

  • For a pan sauce, place the roasting pan over medium heat on the stovetop. Add 1 cup of broth (chicken or beef) to deglaze the pan, scraping up any browned bits. Simmer until reduced slightly, then whisk in 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water until thickened.
  • If you prefer a lower oven temperature for the entire cook time, roast at a steady 350 degrees Fahrenheit until the internal temperature reaches 145 degrees Fahrenheit.
  • Use a meat thermometer to check the pork loin internal temp for accuracy; 145 degrees Fahrenheit is the safe target for juicy results.
