Make flavorful, tender shredded chicken for authentic gyros using your slow cooker. This easy recipe requires minimal effort for a delicious weeknight Greek chicken dinner.

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a small bowl, whisk together the chicken broth, lemon juice, olive oil, oregano, garlic powder, onion powder, salt, pepper, thyme, and cinnamon.
  3. Pour the liquid mixture over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and easily shreds.
  5. Remove the chicken from the slow cooker and place it on a cutting board. Shred the chicken using two forks.
  6. Return the shredded chicken to the slow cooker and stir it into the remaining cooking liquid to coat thoroughly.
  7. Keep warm on the ‘Keep Warm’ setting until ready to serve.

Notes

  • For serving, warm pita bread. Top the chicken with sliced tomatoes, red onion, and lettuce.
  • Prepare a simple tzatziki sauce by mixing plain Greek yogurt with grated cucumber, garlic, and dill.
  • This shredded chicken freezes well for make ahead chicken gyros filling.
