Make perfect, round cake pops at home that taste just like the popular Starbucks treat. This recipe focuses on the right cake-to-frosting ratio and a smooth, hard chocolate coating.

  • 1 box (15.25 oz) cake mix (any flavor, yellow or chocolate recommended)
  • Ingredients required by cake mix box (usually eggs, oil, water)
  • 1 container (16 oz) store-bought frosting (match cake flavor)
  • 1 bag (12 oz) candy coating wafers (white or colored, for coating)
  • 1 teaspoon coconut oil or vegetable shortening (optional, for thinning coating)
  • Cake pop sticks

Instructions

  1. Bake the cake according to the package directions. Let the cake cool completely.
  2. Crumble the cooled cake into fine crumbs in a large bowl. Remove any large, unbaked sections.
  3. Add the entire container of frosting to the cake crumbs. Mix thoroughly with your hands or a sturdy spoon until a thick, uniform dough forms. This mixture should hold its shape when squeezed.
  4. Roll the dough into uniform balls, about 1 inch in diameter. For perfectly round cake pops, use a small cookie scoop for consistent sizing.
  5. Place the balls on a parchment-lined baking sheet. Chill the cake balls in the refrigerator for at least 2 hours, or until very firm.
  6. Prepare the coating: Melt the candy wafers according to package directions, usually in a microwave-safe bowl in 30-second intervals, stirring between each interval. Stir in the coconut oil or shortening if the mixture is too thick.
  7. Dip the tip of a cake pop stick into the melted coating and insert it about halfway into a chilled cake ball. This acts as glue. Return the tray to the refrigerator for 10 minutes to set the stick.
  8. Dip the entire cake ball into the melted coating. Gently tap the stick against the side of the bowl to remove excess coating.
  9. Place the coated cake pop upright into a cake pop holder or a block of styrofoam to dry completely until the shell is hard.

Notes

  • For a no-crack coating, ensure your cake balls are very cold before dipping. Temperature shock causes cracking.
  • Use high-quality candy melts or melting chocolate for the best, smoothest shell finish.
  • If the coating becomes too thick while working, reheat it briefly in the microwave.
  • For the Starbucks Birthday Cake Pop look, use white coating and immediately sprinkle with colored nonpareils before the coating sets.
