  • 1 tablespoon olive oil
  • 1 pound ground beef (85% lean recommended)
  • 1 medium onion, chopped
  • 2 cups sweet potatoes, peeled and diced into 1/2-inch pieces
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup salsa (mild or medium)
  • 1/2 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Heat the olive oil in a large, 12-inch skillet over medium-high heat.
  2. Add the ground beef to the skillet. Break the meat apart with a spoon and cook until browned, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the chopped onion to the skillet with the ground beef. Cook for 3 minutes until the onion softens.
  4. Stir in the diced sweet potatoes, chili powder, cumin, oregano, salt, and pepper. Cook, stirring occasionally, for 5 minutes.
  5. Reduce the heat to medium-low, cover the skillet, and cook for 8 to 10 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir halfway through cooking to prevent sticking.
  6. Stir in the rinsed black beans and frozen corn. Cook uncovered for 2 minutes until heated through.
  7. Pour the salsa over the mixture and stir gently to combine.
  8. Sprinkle the shredded cheese evenly over the top of the skillet mixture. Cover the skillet again and cook for 2 to 3 minutes, or until the cheese is melted and gooey.
  9. Remove from heat and serve the sweet potato skillet directly from the pan.
