Ingredients
Scale
1 pound ground beef
1 packet (1 ounce) taco seasoning
1 can (16 ounces) refried beans
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1 can (10 ounces) diced tomatoes and green chilies (Ro-Tel), undrained
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup shredded Mexican blend cheese (for topping)
Instructions
Cook the ground beef in a skillet over medium heat until browned. Drain off any excess grease.
Stir the taco seasoning into the cooked ground beef and set aside.
In a medium bowl, mix the softened cream cheese and sour cream until smooth.
Spread the refried beans evenly in the bottom of a 9-inch pie plate or a small slow cooker insert. This is your first layer.
Spread the cream cheese and sour cream mixture over the beans.
Spread the seasoned ground beef mixture over the cream cheese layer.
Pour the undrained diced tomatoes and green chilies over the beef layer.
Sprinkle the Monterey Jack cheese and cheddar cheese evenly over the top.
Bake at 350 degrees Fahrenheit for 20 to 25 minutes, or until the dip is hot and the cheese is melted and bubbly. If using a slow cooker, cook on low for 2 hours or high for 1 hour.
Sprinkle the reserved Mexican blend cheese on top during the last 5 minutes of baking or heating.
Serve this warm baked dip immediately with tortilla chips or crackers.
Notes
You can prepare all the layers ahead of time, cover the dish, and refrigerate it for up to 24 hours. Add about 10 minutes to the baking time if baking straight from the refrigerator.
For a Crockpot Party Dip adaptation, layer the ingredients as directed in a small slow cooker and heat until warm.
This recipe is a guaranteed crowd pleaser for game day or any gathering.
