1 package (14.1 ounces) refrigerated pie crusts (2 crusts total)
1 large egg, beaten (for egg wash)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Add the ground beef to the skillet. Cook, breaking it up with a spoon, until it is browned. Drain off any excess fat.
Stir in the minced garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
Sprinkle the flour over the meat mixture and stir well to coat everything. Cook for 1 minute.
Gradually pour in the beef broth and water, stirring constantly to prevent lumps. Add the Worcestershire sauce, salt, and pepper.
Bring the mixture to a simmer. Reduce the heat to low and cook, stirring occasionally, until the gravy thickens, about 10 to 15 minutes. Remove from heat and let the filling cool slightly. This is your best meat pie filling.
