Ingredients
Scale
15 ounces whole milk ricotta cheese, drained if watery
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons hot honey, plus more for drizzling
1 tablespoon chopped walnuts (optional)
Fresh rosemary sprigs for garnish (optional)
Instructions
Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and airy.
Transfer the whipped ricotta dip to a shallow serving bowl.
Drizzle the 2 tablespoons of hot honey over the top of the dip.
Sprinkle with chopped walnuts, if using.
Garnish with fresh rosemary sprigs.
Serve immediately with crostini, crackers, or fresh vegetables.
Notes
Drain the ricotta cheese for at least 30 minutes using a fine-mesh sieve lined with cheesecloth or a coffee filter to prevent a watery dip.
If you do not have a food processor, you can use a high-powered blender or a hand mixer, but you may need to process longer to achieve a smooth texture.
For a savory-sweet profile, substitute the hot honey with regular honey and add 1/4 teaspoon of red pepper flakes to the ricotta mixture before whipping.
