  • 15 ounces whole milk ricotta cheese, drained if watery
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons hot honey, plus more for drizzling
  • 1 tablespoon chopped walnuts (optional)
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into a food processor.
  2. Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth and airy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl.
  4. Drizzle the 2 tablespoons of hot honey over the top of the dip.
  5. Sprinkle with chopped walnuts, if using.
  6. Garnish with fresh rosemary sprigs.
  7. Serve immediately with crostini, crackers, or fresh vegetables.

  • Drain the ricotta cheese for at least 30 minutes using a fine-mesh sieve lined with cheesecloth or a coffee filter to prevent a watery dip.
