  • 1 teaspoon salt, divided
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour (for low-carb/keto option)
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce or marinara
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons mini pepperoni slices (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the zucchini and slice them into rounds about 1/4 to 1/2 inch thick. You should get about 20 to 24 slices.
  3. Place the zucchini slices on a plate and sprinkle them evenly with 1/2 teaspoon of salt. Let them sit for 10 minutes to draw out excess moisture.
  4. Gently pat the zucchini slices dry using paper towels. This step is important for crispy bites.
  5. In a medium bowl, combine the dried zucchini, beaten egg, Parmesan cheese, almond flour (if using), pepper, and the remaining 1/2 teaspoon of salt. Mix until the zucchini is coated.
  6. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  7. Bake the zucchini bases for 10 minutes until they start to firm up.
  8. Remove the sheet from the oven. Top each zucchini slice with about 1 teaspoon of pizza sauce, a sprinkle of mozzarella cheese, and a piece of pepperoni, if desired.
  9. Return the bites to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly.
  10. Serve immediately as a healthy snack or party appetizer.

Notes

  • For an Air Fryer Zucchini Pizza method, arrange the topped bites in a single layer in the air fryer basket. Cook at 375°F (190°C) for 6 to 8 minutes, checking halfway through, until the cheese is melted.
  • If you skip the almond flour, the mixture will be wetter; press the zucchini slices firmly before baking the first time.
  • You can customize toppings with mushrooms, bell peppers, or Italian seasoning.
